Cooking school · New Orleans
French Quarter school teaching Cajun and Creole cooking with stories since 1980
The New Orleans School of Cooking has taught Cajun and Creole food in the French Quarter since Joe Cahn founded it in 1980. Greg and Suzanne Leighton now run it as a family business. It sits on St. Louis Street in a renovated molasses warehouse from the early 1800s, with a courtyard and fountain. The house style is "Fun, Food & Folklore": chefs teach you a roux along with the history behind it and a few jokes.
The cheapest way in is the demonstration class. It starts at $40 and is open to all ages. A chef cooks dishes like jambalaya and crawfish etouffee while you watch, then you eat a full lunch and take the recipes home. Hands-on classes cost $149, are for ages 18 and up, and run daily at 10 am and 6 pm. Up to 10 guests share five cooktops and cook a full dinner, such as red beans and rice or shrimp Creole, plus a dessert like Bananas Foster.
There are shorter and specialty options too. The 90 minute labs, like Gumbo 101 and Pralines 101, start at $75. A courtyard cocktail class for ages 21 and up costs $95, and a Sicilian Flavors of New Orleans class costs $175.
