Chef Tech is a Long Beach cooking school run by married chefs Teri Appleton Villanueva and Jorge Villanueva, who met working at Ocean Avenue Seafood in Santa Monica. Teri graduated from the Culinary Institute of America, is a pastry chef, and studied Mexican cooking in Veracruz and Oaxaca with Rick Bayless. Jorge has cooked for 30 years, including as corporate chef at Wolfgang Puck's. He is known for seafood, pizza and knife skills.
Technique is the main draw for adults. Pro Chef: Skills & Techniques runs on Sundays from 9 AM to 1 PM. It has ten four-hour classes on emulsified sauces, braising, frying and more. You can book the full series for $1,040 or drop in for $125 a class. Menus run from Branzino Meunière to Thai meatballs in green curry. The school also runs Friday evening and Saturday afternoon workshops, a four-week Fundamentals of Cooking series and Cake Bake & Decorate.
Kids ages 6 to 14 can join the Kids Monthly Cook & Bake Series, which meets once a week. A Thursday homeschool option accepts funds from several charter schools. Private parties start at $125 per person. Google reviewers give the school 4.8 stars from 80 reviews.
