The King's Roost is a grain and flour shop in a 2,000 square foot Glassell Park warehouse on North San Fernando Road, with a teaching kitchen inside. Founder Roe Sie leads the signature three-hour sourdough workshop. You mill whole grains, make and feed starter, mix, shape and slash dough, churn butter and taste bread that day. You leave with your own dough to bake at home and some of Roe's wild starter.
Chef Mary Moran of The Silverlake Kitchen teaches shorter menus: cinnamon rolls, whole grain buttermilk biscuits, and semolina pasta with bolognese or tomato sauce, for $100 to $110. She also runs weekly after school cooking classes for kids. Chef Nina Zippay of Radical Cooks teaches private classes focused on vegan and sustainable cooking.
Reviewers praise how much Roe knows about grain history and nutrition. The shop holds a 4.9 rating from 66 Google reviews. The bread class works for first-time bakers and seasoned sourdough bakers alike. If you live outside LA, a self-paced online version ships fresh flour and starter to your door.

No. You mill flour in class, and you'll learn about the tools so you can decide later whether to buy a mill.
No. The workshop is meant for everyone from people who have never baked to professional bakers. Fresh milled flour behaves so differently that experienced bakers often start nearly from scratch too.
You take home the dough you mixed in class to bake at home, plus some of Roe's wild sourdough starter.
Yes. The online class runs about 6 hours at your own pace, with one year of access to 10 chapters. A kit with two fresh milled flours, starter and pre-measured salt ships to your home.
No. Freshly milled flour contains gluten, and there is airborne gluten in the classroom and store.
