The Loretta Paganini School of Cooking is on Mayfield Road in Chesterland, beside its sister culinary institute, ICASI. Classes run in either building and cover a wide range of topics in hands-on, demonstration and dinner formats. Instructors include Cleveland chefs such as Dante Boccuzzi and Tim McCoy, plus founder Loretta Paganini and ICASI staff and students.
Adult classes are for ages 18 or 21 and up. Children ages 3 to 17 have their own age-appropriate classes and cooking camps. If you want more structure, the Basic and Advanced Techniques classes are aimed at people with serious commitment.
Private events last 2 to 3 hours. They can be hands-on or a demonstration, and you can pick a menu the chefs have already planned or ask for a custom one. For a celebration, you can also book the school's Sapore restaurant. The school runs a gourmet store selling knives, bakeware and pantry items. Loretta Paganini also leads small-group food tours of Italy in spring and fall.
