The Pastry Academy is a professional pastry school in Las Vegas. Chef Amaury Guichon, host of Netflix's School of Chocolate, co-founded it with Belgian pastry chef Michel Ernots. Ernots is a Compagnon du Devoir and taught at The French Pastry School in Chicago. The school runs one program: an intensive seven-week course covering pastry, plated desserts, chocolate, ice cream, danish, bread, candy and chocolate showpieces.
Students start in the classroom and then do hands-on work in the kitchen. They also learn the chemistry behind pastry so they can create desserts of their own. Classes are capped at 24 students per teacher, with up to two main instructors per session. Chef Amaury teaches at the school, and students get several chances to learn from him directly. Tuition covers three embroidered chef jackets, a Matfer Bourgeat equipment kit and a course handbook. Students who finish every module get a certificate.
The program suits aspiring pastry cooks and career changers of any skill level, aged 16 and up. Tuition is quoted on request. The school holds a 4.7 Google rating from 66 reviews.
