Small farm kitchen in Bend teaching hands-on pizza, pastry and Italian dinners with Donna
Freshfields Farm is a working farm in Bend that also takes custom baked good orders and runs a bed and breakfast. Donna teaches baking and cooking classes in the farm's kitchen. The schedule is short, with a few classes posted at a time.
The pizza class is the most popular. You make dough from scratch with Tipo 00 flour, roll it out, bake it and build your own pizzas to share. The Italian class covers homemade ricotta, focaccia, stuffed Mediterranean bread, risotto and a lemon ricotta cake, and ends with a sit-down dinner. Pastry and Pie Dough works through galette, pate brisee and brioche, with an Alsatian onion and Gruyere galette and a Torta Rustica.
Every class is hands-on and you eat what you make. Non-alcoholic drinks are unlimited, each guest gets a glass of wine or beer, and you can bring your own bottle. Groups of four or more can book a private class, and the French and Spanish menu with paella runs only as a private class.
