You also cover refrigerated dough management, stretching techniques and running an oven at different temperatures. The ten hours of theory cover wheat and flour chemistry, water temperature, yeast, salt and oil, and electric, gas and wood-fired ovens. The week ends with a theoretical and practical exam.
