Cambridge School of Culinary Arts is a working chef school a few steps from the Porter Square stop on the Red Line. Chef Roberta Dowling started it in 1974 by teaching people to cook from her home. She had trained under Madeleine Kamman and studied with Marcella Hazan. Today the school runs 16-week certificate programs and 37-week professional programs in both culinary and pastry arts.
Home cooks get a taste of that training through recreational classes. These are grouped into Single Day Workshops, a Techniques of Cooking Series, a Techniques of Baking Series, a Regional Cuisine Series, Cooking Couples nights and classes for teens. The school also lists online classes and group events. Every group of students, professional or recreational, saves food scraps for compost through a program with the City of Cambridge. Produce, meat and seafood come from local vendors.
The school holds a 4.9 Google rating from 956 reviews. It suits novices who want more confidence, couples and friends looking for a night out, and anyone thinking about cooking for a living.
