Cheeseology is a cheese-making studio in Ybor City, Tampa. Paul and Kelly started it after a cheese class in Napa and Sonoma, when they came home and found few local classes like it. Classes run 90 to 120 minutes, with three instructors in each one and a burner station for each guest. Most start with a tasting. Then you turn curds into fresh mozzarella or burrata and take it home.
There's more on the menu than the basics. In the Pizza class, your fresh mozzarella goes onto locally made dough and sauce, and the pizza bakes in an Ooni oven. Sweet Ricotta Brulé ends with a chocolate-drizzled ricotta cheesecake. Cannoli fills locally made shells with ricotta. Mozzarella Pinwheels is a faster-paced follow-up for people who have already taken the mozzarella class. There's also a monthly wine and cheese pairing, using small-production wines picked by wine expert Meredith Barlin.
After class you can buy wine, beer and local charcuterie and relax in the lounge. It works well for date nights and groups. Google reviewers give it 4.9 from 214 reviews.

No. Outside food and drink aren't allowed. You can buy wine and beer on site, including wine and beer flights in class and in the lounge.
Private events start at $1,000. Groups of 10 to 20 can book any class. Groups of 20 to 40 split into two rotating classes, usually Burrata or Mozzarella, while one group waits in the lounge. Group bookings of $1,000 or more get 10% off.
There's street parking and open lots nearby, and the Centro Ybor Garage is directly behind the studio. The garage costs $1 for the first hour, then $2 an hour, up to $12.
