Saturday workshops start at noon and weeknight workshops start at 6 PM.

About Cooking In The Couve

Cooking in the Couve is Chef Joe's workshop series in Vancouver, Washington. Classes are held at Culinary Lab Northwest. Each class teaches a full menu built around one theme, and every seat costs $95. The themes range widely: Bangkok wok cooking, Seoul street food, a Paris bistro night, a New Orleans supper club, All Aboard the Marakech Express, and several Pacific Northwest and Italian menus.

Menus run three or four courses. Yummy Northwest Eats covers pale ale crab bisque, brie on grilled sourdough, rosemary truffle frites and a salted caramel cheesecake with a pretzel crust. Chef's Favorites teaches chicken cordon bleu wrapped in puff pastry with sauce Mornay, then a cherry fudge brownie with amaretto crème anglaise. Swiss Alpine Nights pairs pork medallions and potato rösti with a molten chocolate hazelnut fondant.

The classes are hands-on, and ingredients and stations are supplied. Saturday sessions start at noon and weeknight sessions at 6 PM. The menus are friendly to beginners, and techniques like Mornay sauce and puff pastry give experienced cooks plenty to work on. It works well for a date, a solo night out or a few friends.
