Home bread school on Albuquerque's west side, built around a hand-built wood-fired oven
Sherwood Coffee 'n' Bread is a home-based bread school on Albuquerque's west side, run by founder Igor. He was born in Uzbekistan, started working in kitchens at 14 and was a sous-chef by 18. Then came a long career in IT. In 2024 he finished building a wood-fired brick oven with a 42-inch firebrick interior, decorated in a mix of Mediterranean, Navajo, New Mexico and Uzbek styles. Many classes happen at that outdoor oven.
Bread is the core. You can learn sourdough, French baguettes and flatbreads in the wood-fired oven, along with pizza and fresh pasta with sauces. Some newer classes run indoors at the IPEC Bread Lab, including a 1-Day Advanced Sourdough Workshop. Groups are small and you do the work yourself. Techniques are adapted for Albuquerque's altitude, and you take the recipes home.
It suits beginners and home bakers who want to understand why a loaf works, not just follow steps. Reviewers praise Igor's patient, detailed teaching, and the school holds a 5 rating from 96 Google reviews. Private groups and team events can bring their own wine or beer.
