Multi-week courses and boot camps
Arizona Culinary Institute is a career school in Scottsdale. It is not a place for a one-night class. Since 2006 it has run one full-time program, the Diploma in Culinary Arts, Baking and Restaurant Management. The day track runs Monday to Friday, 8am to 2pm, for about 8 months. The evening track runs Monday to Thursday, 5pm to 11pm, for about 10 months. Students start cooking on day two and spend roughly 80% of their time in the kitchen.
The 18,000 square-foot building has five professional kitchens. They host courses like Meat Fabrication & Saucier and Advanced Baking & Showpieces, plus du Jour, a student-run restaurant. Classes usually have 10 to 12 students and never more than 20. The instructors include Executive Chef Christopher Wolf, who cooked at The Inn at Little Washington. Another is Erin Coopey, a cookbook author who won Guy's Grocery Games.
Students finish with a required externship, and most externships are paid. ACI is accredited by ACCSC and has a 4.7 Google rating from 101 reviews. For tuition, you contact admissions directly.
