Bay View pasta shop where the owner teaches six-person classes in her Sicilian family's way
Beginners
No experience needed
Semolina is a fresh pasta shop in Milwaukee's Bay View. It sells extruded pasta made through bronze dies and hand-shaped pasta. Owner Petra Orlowski teaches the classes herself, using the methods her Sicilian grandmother, Rosaria Burgarino Bruno, taught her. Her family came from Chiusa Sclafani in Sicily.
There are four classes, and each takes no more than six people. Classic Egg Dough covers the well method, then fettuccine and a simple sauce. Hand-Shaped Pasta uses kitchen items and specialty tools to make different shapes. Ravioli has you make a cheese filling and taste two ravioli with two sauces. Gnocchi covers ricotta and potato versions. Every class includes a glass of wine or another drink and a pasta tasting, and you take home what you make.
The shop also hosts Sunday Suppers for eight guests. You cook five dishes and then eat family style with paired wines. One menu was based on the film Big Night. Book signings with Italian food authors are on the calendar too. Google reviewers rate Semolina 4.9 from 55 reviews.
