Home cook classes at Escoffier's Boulder culinary school, taught by Chef Dallas Houle
These are the home cook classes at Auguste Escoffier School of Culinary Arts in Boulder, a campus that also trains students for culinary and pastry careers. Chef Instructor Dallas Houle leads them. He has over 20 years in kitchens, from food trucks to fine dining and upscale vegetarian cooking.
The calendar leans international. Flavors of Persia II covers pomegranate ash, walnut chicken stew and date-nut halvah. German Comforts brings spatzle, pork schnitzel and braised cabbage. Indian Cuisine teaches desi murgh curry, mutter palao and naan. You will also find Thai, Chinese wok, Greek and Spanish tapas nights, a vegetarian Italian menu, and baking classes like Holiday Desserts and a two-day bread series.
Most classes are hands-on, and you share a meal at the end. Technique by Escoffier: Winter Soups is a demonstration by Chef Dallas instead. Weeknight classes run 4:45 to 8:00 PM, and Saturday classes start late morning. Most cost $75. The school also hosts corporate classes and private events for groups.
