Scottsdale pastry shop where Chef Jenna Leurquin teaches sourdough, croissants and macarons
JL Patisserie is a French-style pastry shop on Shea Boulevard in Scottsdale. Chef Jenna Leurquin leads baking classes at the shop, which also makes and sells macarons, cakes and pastries. Sourdough runs through the menu. The bakery builds its panettone on a stiff Lievito Madre starter, and classes cover sourdough croissants, baguettes and sourdough loaves, and a naturally leavened sourdough brioche dough shaped into dinner rolls, cinnamon rolls and babka.
Most classes run two or three hours in the afternoon. Shorter sessions cover French macarons with ganache fillings, eclairs, quiche, and Thanksgiving pies: pumpkin, apple and pecan in an all-butter crust. The holiday lineup adds a Christmas Pavlova wreath and specialty croissant and Danish.
Returning students can take a three-day professional masterclass in advanced viennoiserie. It is meant for people who finished the original masterclass. Online classes are offered too. A gift ticket arrives as an emailed voucher code that the recipient uses at checkout.

Most public classes last two to three hours, usually 4 to 6 pm or 3 to 6 pm. The professional masterclass runs three days, 7 am to 3 pm.
