Italian Classics for the Modern Vegan

The school

Miette Culinary Studio

Belgian chef Paul Vandewoude's bistro-style classes in a Little Italy loft since 2001

Miette has taught cooking in New York since 2001. The classes started as Monday nights at Tartine in the West Village. Today they run in an 1,800 sq. ft loft on Mulberry Street in Little Italy, with exposed brick, an open chef's kitchen, rustic wood tables and a landscaped terrace. Head chef and owner Paul Vandewoude trained in Belgium and ran the kitchens at Le Zinc and Tartine. He teaches most public classes himself.
