Miette has taught cooking in New York since 2001. The classes started as Monday nights at Tartine in the West Village. Today they run in an 1,800 sq. ft loft on Mulberry Street in Little Italy, with exposed brick, an open chef's kitchen, rustic wood tables and a landscaped terrace. Head chef and owner Paul Vandewoude trained in Belgium and ran the kitchens at Le Zinc and Tartine. He teaches most public classes himself.
Every class builds a full meal of appetizer, main and dessert, and you eat it together at the end. Classes are three hours. Knife Skills: The Fundamentals runs almost every week and covers bruschetta, roast chicken and an apple tarte fine. Other menus include coq au vin with raspberry soufflé, a vegan Italian menu with butternut squash risotto, and a bistro class where you make spaetzle.
Private lessons with Chef Paul are available for 1 to 6 people. The loft also hosts parties and team events for up to 30 seated guests. Miette holds a 5 rating from 44 Google reviews.
