Small-group cheesemaking classes in Sacramento, from fresh ricotta to aged Gouda and Brie
Scratch Made Life is a small cheesemaking school run by Kim out of the Scratch Made Life Kitchen at 4932 Shady Leaf Way in Sacramento. Each class covers one cheese or a family of them: Brie, Gouda, Swiss, Asiago, Monterey Jack with a pepper jack version, and cheddar and other UK cheeses. You make the cheese yourself and take it home, often as a small wheel to age.
The Italian Trifecta is the most popular class and often sells out. In one morning you make fresh ricotta, stretched mozzarella and an aged Parmesan, so it works well as a first class. Kim also teaches two blue cheeses, including her own Valley Blue recipe. She also runs classes in sausage making, sourdough from starter to loaf, and pizza, where you make the dough, two sauces and the cheese.
Raw cow, A2 and goat milk are for sale at class if you order ahead. Groups of five or more can book any class privately, at the kitchen or at home. The school holds a 5 rating from 2 Google reviews.

The cheese you make. In the Italian Trifecta that means a ball of mozzarella, fresh ricotta and about an 8 oz wheel of Parmesan. The Brie class sends you home with about an 8 ounce wheel to care for.
Current scheduled cheesemaking classes are $66 per person, and the Italian Trifecta is $77. Take-home kits cost $5 or $10 extra.
