Small South End school for French pastry, run by two Ritz-Escoffier-trained bakers
Serious cooks
Multi-week courses and boot camps
Joie en Cuisine is a small French baking school at 102 Waltham St. in Boston's South End. Two chefs run it. Evelyn Schichner trained at L'ecole Ritz-Escoffier in Paris and met Julia Child several times. Lilly Milman has baked all her life and also took classes at Ritz-Escoffier. The two met at the Cambridge Center of Adult Education and have taught together ever since.
Classes run three hours on Monday evenings or Sunday mornings, and each one covers a single pastry in depth. You might laminate dough for croissants and pain au chocolat, pipe choux for eclairs and profiteroles, or make gluten-free macarons with Italian meringue. The Chocolate Masterclass ends with mousse, hot chocolate in the style of Les Deux Magots and a glass of Cremant from Limoux.
Every class costs $215. You go home with a box of what you baked, an apron, a recipe packet and access to a baking help hotline. The school has a 5 rating from 8 Google reviews. It suits home bakers who want real French technique in an intimate setting.
