Cooking school · Staten Island, NY
One-on-one pizzeria training inside a working Staten Island brick oven restaurant
Pizza School of NY, also known as Goodfella's Pizza School, trains future pizzeria owners and working chefs. Classes take place at the original Goodfella's restaurant on Hylan Boulevard in Staten Island, open since 1992. Training is one on one. The school takes one student, or one set of business partners, at a time. Owners Scot Cosentino and Andrew Scudera teach, and the Goodfellas hold 4 national and 9 regional pizza titles.
The 4 Day Pizzaiolo Course starts with dough: flour, yeast, stretching and troubleshooting. It also covers sauces like vodka and porcini, plus toppings, calzones, rolls and bread. Styles include New York thin crust, brick oven, Sicilian and Grandma pies. Students run the wood fired oven, cook dozens of pizzas a day and serve real guests. The 6 day Master of Pizza class adds food cost, inventory control and custom menu development.
This is professional training, not a casual night out. No experience is needed, and pricing is by phone. The school holds a 5 rating from 9 Google reviews.
