Red Inside Culinary runs hands-on cooking classes in a small kitchen studio in Greenwich Village. Groups of 20 to 40 use a shared space in Little Italy. Two of the chefs are Italian. Ivan Beacco grew up in Trieste, and Academia Barilla named him a Master Chef in Italian Cuisine. Stefano Biaggioni comes from near Milan. The third, Dona Giorgadze, is from Georgia and wrote the cookbook Around the Georgian Table.
You can taste that mix in the class list. The Pasta Class and A Tour of Italy sit next to The Georgian Table, The French Connection, Sushi Rolls 101, Viva España, a Greek class, The Steakhouse and a baking class. You cook each dish yourself, then sit down and eat it with the group. Reviewers mention knife skills, remoulade, chicken cordon bleu and finishing French onion soup with a torch.
Groups love the Iron Chef competition. Each team gets a mystery basket with pork, chicken or salmon plus two secret ingredients, and has 90 minutes to plate a dish. It works well for birthdays and office team building. The studio has a 4.9 Google rating from 172 reviews.
