Learn to make Tortellini in Beef Broth (Tortellini in Brodo), the quintessential northern Italian holiday centerpiece rooted in Emilia-Romagna. In this class, you’ll master the time-honored craft of rolling delicate sheets of fresh egg pasta, cutting them into precise squares, and hand-folding the iconic, miniature tortellini around a rich, savory filling. We’ll also cover the secrets to simmering and clarifying a crystal-clear, deeply flavorful artisanal beef broth, creating the comforting, golden bowl that graces Italian holiday tables every winter.
