Community Food Co-op is Bellingham's member-owned grocery, founded by neighbors in 1970. It runs its cooking classes with Whatcom Community College, and local chefs, restaurateurs and food producers teach them. Every class includes tastings of the dishes made.
Most sessions are demonstrations, where you watch, learn and ask questions. A few are hands-on, like Emma Le Dû's Breton buckwheat galettes and sweet crêpes. She learned them from her mother, who learned from hers. Karina Davidson has spent nearly 50 years teaching home cooking. Here she teaches winter soups and a classic French dinner of boeuf bourguignon and pavlova. Robert Fong teams up with Lummi Island Wild for a seafood night with sashimi and seared scallops.
The lineup leans local and a little nerdy. Tim Shenkin of Makeworth Coffee Roasters teaches coffee cupping. Tera Richardson of Elk Street Tavern teaches mocktails. Genevieve Bardwell bakes salt-rising bread alongside sourdough. Kids ages 7 to 12 have a Third Thursday club with Annalee Dunn, founder of Tiny Onion Cooking School.
