Discover why expertly frozen seafood often outshines "fresh." Ian Kirouac, President of Lummi Island Wild, joins Chef Robert Fong to walk through five stunning preparations: lightly fried halibut with tangerine-lemon sauce, seared scallops with chives, wasabi nigiri sushi, salmon belly sashimi with lemon and seven-spice soy, and pan-seared salmon with fall mushrooms. Robert is a longtime Co-op instructor and former Bellingham restaurateur, and Ian leads one of the region's most respected sustainable fisheries. Demonstration.
