with Emily Baron When the weather turns chilly, there’s nothing quite as comforting as a pot of soup simmering on the stove. Join us for a cozy, hands-on class celebrating three delicious soups that are perfect for the season. We’ll start with a beloved classic: matzo ball soup , with tender, fluffy matzo balls floating in a rich, flavorful chicken broth. Next, we’ll make a hearty pasta e fagioli , combining creamy beans, pasta, vegetables, and herbs for the ultimate rustic Italian comfort food. And finally, we’ll turn pumpkin into something a little more unexpected with a silky harissa pumpkin soup , brightened with the flavors of orange and saffron and a gentle kick of heat and finished with candied pepitas. Along the way, you’ll learn techniques for building flavorful broths, creating hearty soups from pantry staples, and balancing creamy, puréed soups with spice and acidity.
